A' la Carte Menu




Starters:

Warm Chickory Salad, almonds, beets, Piedmont dressing

Steamed Razor Clams, sweet corn broth, potatoes, croutons

Baby Kale Salad, soft-boiled egg, celery, Crottin de Chavignol, bacon vinaigrette

Goat Terrine, stone-fruit chutney, potato galette, fraiche foam

Duck Fat Beet Fries, truffle aioli, cracked black pepper

Gratin of parsnip, potato, leeks, scallops

Soup of the Day





Lite:

Fried Soft Shell Crab, vanilla lemon pan sauce, fingerling potatoes, parsley

Grilled Seasonal Fish Burger, hydroponic heirloom tomato, hydroponic bib lettuce, smoked tomato aioli

Dungeness Crab Salad, bib lettuce, house pickles, watercress dressing

Braised Pork Belly, molasses, sour orange, chard, cracklings

Bouillabaisse, razor clams, scallops, fresh fish, grilled sourdough croutons





Hearty:

Seared Pork Chop, sheep's ricotta gougeres, caramel apple, sage brown butter

Roast Pheasant, fork smashed celeraic, brussel sprouts, maple jus whole/half

Lamb Shank Fricassee, sofrito, hydroponic tomato nage, fried panisse

Smoked Goat Short Ribs, Forestier sauce, potatoes, peas & carrots

Seared Abalone, 10 spice, salsify, endive, sweet yam

Wagyu Tar-Tar Lollipop, fleur de gris, bergamot oil, hydroponic cucumber emulsion

We believe in creating, not following, the newest food trends to influence a food industry which reflects the bounty of the Northwest. We are skilled chefs from different backgrounds who are taking over the Oregon Food Industry one tastebud at a time! If you are a professional chef, and live in Europe or the U.S., follow our blog and send a request to us to alter the menu at any time.

Oh Yah! When we have our set date for our first event, a few items from the menu will become creations. We promise to take lots of pics! So if you want to see your ideas come to fruit, post, post, post!
